Healthy Dinner for a busy family!

I feel like Chicken tonight, Like Chicken tonight! Hey, it's MarilynTheChef, this was Monday's dinner! I had a busy weekend chefing my heart out and was exhausted. If I haven't told you before, I have a three year old and a 21month old, two amazing girls. They are hyper and well, TODDLERS!

I refused to get budget breaking and palate weakening take out, so here you have it. My gluten free, homemade Chicken Breast Strips with fresh berries. Try it out on your next tiresome evening and watch how much you all enjoy it!


Chicken Recipe:
1 pound of  medium sliced chicken breast (depending on family size)
salt and pepper to taste
1 tbsp of minced cilantro
1 tbsp of minced kale or spinach
1 whisked egg
1 cup of Coconut flour
2 cup of Coconut or Olive oil for frying

In a large bowl place chicken, salt, pepper, cilantro and veggie. Get your hands all in there and mix. Wash hands, your contaminated! Place oil in a frying pan and heat on a medium flame. 
Ok, so grab your whisked eggs, pour them and your flour in the bowl. Mix it all up until it's nice and sticky. Place them in the hot oil for about 5 minutes each side, until golden brown. Now serve with you favorite whole or sliced berries.

Frozen Cookie Dough!



Hey it's MarilynTheChef, I want to ask a question? Are cookies healthy? Are they a get fit no-no? Well here's my opinion. Chemicals, radical diets and excessive stress eating leads to an unbalanced body. We become unhealthy when we stop exercising, which promotes blood circulation. 

Let's start making meals at home and eliminating the boxes and packages in our cupboards and refrigerators. Natural fat works with our body's chemistry. 

Where are your Chocolate Chip Cookies coming from, packages or things around the house?

 Do you have things like:

1 1/2 cups of Unbleached All Purpose Flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup unsalted butter (room temperature)
1 1/2 cup of light brown sugar
1/2 cup of raw sugar
2 eggs
1 tablespoon of vanilla extract
3 cups steel cut oats
1 1/2 cups dark chocolate chips
1/2 cup sweetened shredded coconut

Preheat oven at 350 degrees. Get a bowl for your flour, baking powder and salt in a small bowl, let's call it the flour bowl. Take a separate medium to large bowl, place all sugar and butter inside and blend until fluffy. Now add eggs and vanilla. Drop in the flour bowl ingredients, the oats and chocolate chips. Stir together. 

Do you see the dough now? Are you excited? Make mini meatballs with the dough, place on a cookie sheet about 2 inches apart. Now take the rest and freeze it in a zip lock bag or air tight container for up to 30 days.  Makes two dozen. Cut into the frozen dough as often as you want, just reseal it properly. Enjoy!

Revive and Exercise!




My daily stress relief is so important to me. Someone in my building told me today "Wow you look great, I must do what you do!" I said, "No, do what works for you!" We must create our own regiment, so it fits and we stick to it!


I am naturally curvy/long and I burn fat fast, but everyone's body is different. Follow principles! Eat well, exercise daily and love yourself!  Don't love the cloths size or a particularly weight. Love you as you are and then the journey will flow! 


Stress, guilt and anxiety are the opposite of Work out! You are pushing things out! It's reviving a healthy flow! Exercise is a rotation of endorphins, blood circulation and energy! Go for it, one day at a time, consistently! I believe in you! You Believe in you!
